Xavier Allard from Cheese Secrets in Niagara-on-the-Lake came all the way out to Wainfleet with an amazing spread. I grew up on a farm next to a dairy farm, and my mom is from the Azores, where they make great butter and cheese, so I couldn't wait to pick his brain.
