Simple Healthy Breakfast: My Overnight Oats Recipe
By Joe GonzalezMar 12, 2021 · Health Happenings
Until I focused on my health, I never really ate breakfast. I never had time. Now this is the breakfast I eat about five out of seven days a week: overnight oats. Alright Robyn usually makes them, so this is actually my first time. Let's see how it goes.
Ingredients
- 1 cup rolled oats
- 1 tablespoon chia seeds
- Ground flaxseed
- Hemp hearts (not in the recipe, but I add them anyway)
- A heaping tablespoon of dark cocoa powder (I buy the darkest one at Bulk Barn)
- Cinnamon, or pumpkin pie spice if you've run out like we did
- A splash of vanilla extract
- About 1 and 3/4 cups of almond milk, or a scoop of almond butter mixed with water
Method
- Add the oats, chia, flax, hemp hearts, cocoa and spice to a container.
- Add the vanilla and the almond butter.
- Pour in the water (or almond milk) and stir it all together.
- If it looks runny, add a few more oats. It thickens in the fridge.
- Refrigerate overnight.
How I eat it
Every morning I scoop some into a bowl and top it with a little more cinnamon and cocoa, plus whatever fruit we have kicking around. It's filling, it's full of fibre and good fats, and it takes about five minutes to prep for the whole week.
